Quinoa and Black Beans

Here's a dish that is easy to put together and do not be fooled by the amount of time the recipe calls for. The fact is that for much of that time the dish is simmering so you have time to do other things like clean up, make a side salad, set the table or just talk with the family. Quinoa is a healthy whole grain. We find Bob's Red Mill quinoa in our local supermarkets. We use canned black beans to save time. Very filling and its great re-heated over the next couple of days.
